Loaf Pan Fruitcake Instructions

Instructions:

Medium 2 pound (907g) American Fruitcake

Requires 1 Loaf Pan and 1 Cup (8oz) Applesauce.

Preheat oven to 275.  Use middle oven rack.

Prepare pan with parchment provided.  See our videos.

Open all packages with scissors.

Place butter/sugar mix in a large bowl.  Add applesauce.  Mix well at low speed.  See our videos.

Add half of flour mix and mix at low speed just until wet.  See our videos.

Add remaining flour and mix at low speed just until wet.  See our videos.

Add fruit and nuts.  Fold together until all fruit and nuts are coated with batter.  See our videos.

Place spoons of batter around the edges of prepared pan and rearrange so batter is touching all pan edges/corners and there are no large voids.  Add remaining batter in layers to get a near level top.  Scrape remaining batter from the bowl and use to fill any voids on the top of the fruitcake.  See our videos.
 
Bake 1 hour 40 minutes.

Cool 2 hours.

Decoration Kit (optional)
Cut whole cherries in half.

Arrange Decoration Kit fruit and/or nuts on a plate to transfer to fruitcake.

Add glaze sugar to small microwaveable glass.

Add 2 Tablespoons of water.  Stir well.

Microwave 30 seconds.  Stir.  Microwave for an additional 10-30
seconds.  Glaze should get hot enough to briefly boil and
appear clear.  Stir.  Set aside to cool.

Remove fruitcake from oven 20 minutes before completely baked.

Brush top of fruitcake with glaze.

Arrange fruit and nuts from Decoration Kit on fruitcake.

Brush fruit and nuts with glaze.

Return to oven for 20 minutes.
